This is a damn special burger! A patty of Ox Heart and 60 day aged beef on a bed of fresh water cress and salsa verde topped with sour cream on a toasted multi seed bun.
Ox Heart? Really? In a burger?
Never had Ox Heart before? Don’t come with any preconceptions.
The blend in the HeartBreaker pattie yields a loose texture but still holds together well. It tastes richer and satisfyingly ‘gamey’ than a burger of 100% beef. The water cress gives a nice crunch while the sour cream balances the meatiness.
Tongue ‘N Cheeks is run by Christiano from Northern Italy. He tells me he is bringing ‘Italian Cuts to the UK’ hence the ox tongue and pig cheeks. If you’re squeamish don’t look at the tongue in the pot. However, you have to try this, tongue has texture half way between liver and beef with a smoother flavour than steak.

Yes definitely if you’re a burger fan. It’s very unique and deserves a chance! This burger is in constant development and this is the second iteration I’ve tried. (The first was 100% Ox Heart with 60 day old beef fat). I will certainly try it again.
