FEATURE: What is the Flat Iron Steak-cut?

I had no idea that Flat Iron was a cut of meat. However thanks to the joy of the internet, I’ve learnt that it’s actually identical to the butler’s steak in the UK… which I’ve never heard of either…

Flat Iron‘ is a term I associate with a building in New York rather than a cut of beef. I was quite surprised to find that this cut of beef was actually only invented 20 years ago!

Apparently, in 2002, some university scientists developed a technique to butcher a waste cut of meat from the shoulder of a cow. This separated the tasty steak from nasty sinew.

Having sampled the Flat Iron Steak at Flat Iron‘s opening today, I can definitely confirm that it is a damn fine cut of beef!
