These chips are proper CHIPS with skin on. Not FRIES. One thing I can’t stand are those skinny excuses for chips the Americans call French Fries. Fortunately these chunky beasts are nicely fluffy on the inside and sport nice crisp skins. They are sprinkled with horseradish smoked salt rather than Rosemary salt.
Chef, Dave Ahern, sat opposite me taking a well earned rest and explained that “Rosemary salt overpowers or interferes with the flavours in the burger”. Hence why he developed the horseradish smoked salt.
