Unusually, these potatoes have been baked with hay and served with yoghurt and marjoram. I’m not sure how the hay adds to the process, but it makes for interesting presentation.
Reminiscent of eggs nestling in a birds nest, the new potatoes are very flavoursome especially the skins. The marjoram adds a herbal lift and the yoghurt adds a nice creaminess. The only downside is picking out the occasional stray hay!
