This course was listed as “Wild Plum & Yoghurt” but it also contained several ingredients including “tonka beans”. Strangely, I associate ‘tonka’ with rugged childhood toy trucks rather than food.
Having also encountered Tonka Beans in an ‘Old Fashioned’ Cocktail at new bar/restaurant Duck & Waffle, I was surprised to find an article stating that the FDA has banned it in America!
In the United States… all foods that contain the chemical compound coumarin are considered by the FDA to be “adulterated” and have technically been illegal since 1954. Tonka beans are a major source of coumarin.
