London Cocktail Week, Isolabella Ice Seminar with Marian Beke

Hosted by bartender, Marian Beke, of Nightjar (formerly of Townhouse, Montgomery Place, Purl) and sponsored by ‘Isolabella Sambuca’ with ‘Eskimo Ice’. This was one of the more unique and informative of the events listed in the London Cocktail Week guide.
Marian presented a comprehensive overview to working with ice. Starting with the manufacture of ice he explained why recreating the ‘crystal clear’ blocks at home is so difficult. He then demonstrated the safe use of ice saws, picks and chisels. Paying careful attention on minimising wastage he skillfully hand carving ice balls, diamonds and hearts to a packed audience.
We were also treated to a demonstration of the art of ice carving from a ice sculptor who finished off a stiletto luge topped with a large ice diamond. The seminar concluded with ideas to use dry ice including the use of a ‘Dim Sum’ Bamboo ‘steamer’ to create a theatrical cascade of infused smoke.
